This guys back story is great but what is important is that he is great at this cooking class thing. He is knowledgable, entertaining and a very good chef.
Here are a bunch of pics from the day. I will write captionS as time allows.
Seaweed jelly made with agar agar
Tumeric Beer
All of the above are taken at the Pasar Badung Market in Denpasar
That's the end of the civet the good beans come out!

Kopi Bali - a local coffee roasting and blending family owned business
Now the cooking class pics begin
The two pics above give a view of the premises Dean is leasing, in Sanur, whilst the new place in Seminyak is being finished.
It's large, open, exteremly nice and almost looks like it was built for this sort of thing.
These are unroasted coffee beans.
The one on the left is a male bean, which only makes up 5% of a crop.
The two on the right are two halves of female bean, the other 95% of a crop.
Peabody (male beans only) coffee sells for ~AU$44/kg, here.
Cocktails and beer flowed freely and here is Tiz enjoying one of many for the day.
Tamarind as it falls from the tree
Some of the many dishes we prepared are below.
So much food get prepared and cooked that it would be near impossible for the paying guests to ea it all.
Thankfully the staff divide it up equally and take it home to their families.
This is a real treat for them as what we generallt take for granted is out of reach for the average worker.
The pictures from Deans are out of sequence and I will get around to rearranging them, as time allows, so please come back for a better look in a few days.
It's a real shame we don't have "smell-a-blog" as you would be drooling as you look at the pics.
If any of the readers of this blog make it to Seminyak I strongly suggest you call in to Deans new shop in Seminyak as he and his staff are great at what they do, make you feel very welcome and give you great value for money.
The rest of the day was spent by the pool at the villa.
More tomorrow .....
